How can we reduce food waste, strengthen the food system and create new business opportunities? During Dalarna Innovation Days 2025, we will meet one of Sweden's most well-known voices in sustainable food, Paul Svensson. On Tuesday, October 21, he will attend the event From food waste to food waste at Dalarna Science Park.
It will be a morning full of flavor, innovation and optimism.
From fine dining to forward thinking
Paul Svensson has gone from being a chef in Michelin-starred restaurants to becoming a driving force in circular food innovation. Using concrete examples from his own business, as well as from international initiatives, he shows how we can rethink raw materials, resources and responsibility.
His message is clear: what we used to throw away can become the basis for something much better. Not only for the climate, but also for the economy and future business models.
Local examples and samples
The morning is not just about lectures. Local dairies Murboannas and Stora Skedvi Mejeri will also be on hand to share how they have transformed the residual product whey into new taste experiences. A clear example of how innovation often starts small, but can have big effects.
After the lecture, it is possible to buy lunch in collaboration with Äteriet, with dishes inspired by the theme of the day.
