How will our eating habits evolve in the future, and why do some food trends catch on while others fade away? And how can we understand which food trends will actually shape the meals of the future? In April, food researcher Richard Tellström will visit Borlänge, Hedemora, and Leksand for a seminar on the food of the future and the forces that influence our food choices.
Over the course of two days, he will visit Borlänge, Hedemora, and Leksand as part of an event organized by Dalarna Science Park. The seminar “Tomorrow’s Food” brings together entrepreneurs, companies, and food enthusiasts to discuss how innovation, culture, and societal changes influence what we eat.

The seminar “Tomorrow’s Food – What Drives Our Food Choices?” focuses on the changes taking place in the food industry, innovation, and entrepreneurship. Participants will gain insights from both research-based perspectives and current examples from Dalarna’s growing food sector.
Food researcher Richard Tellström offers a broader perspective on how food choices are shaped by culture, history, and social change.
“Food is never just about nutrition. It reflects our values, our history, and our social contexts. Food choices are never about nutritional value, but rather about the food we want to be seen with and take pride in. Otherwise, we could just eat pills and animal feed pellets. We need nutrition to survive, but to truly live, we want food that expresses our values and sense of community,” says Richard Tellström.
Richard Tellström is an ethnologist and associate professor of food studies. He is a well-known voice in the Swedish food debate and has appeared in TV series such as *Historieätarna* and *Landet Brunsås*. He has also written several books on Swedish food culture and how our eating habits change over time.
During the program, David Levrén and Anna Torsgården from Dalarna Science Park will share insights from their work on food innovation in the region. They will highlight new business ideas emerging in Dalarna, the challenges entrepreneurs are seeking to address, and what it takes to succeed in a rapidly changing industry.
The seminar is aimed at entrepreneurs, food companies, the public sector, and anyone interested in how the food market of the future is evolving.
