Check out the flavors with Science Tasting

Do you want to know what influences your experience of food and drink? How taste and smell are related and what other factors come into play? Take part in the Science Tasting during Dalarna Innovation Days and you will get the answers. You will also have the chance to ask your own questions to food and wine journalist Per Styregård and Professor Johan Lundström, who is an expert on the human sense of smell and taste.

- "We are very excited to be able to offer an event that gives more people the opportunity to learn more about the science behind our taste experiences. And presented by a very professional team," says David Levrén, business coach at Dalarna Science Park and one of those with a special focus on Dalarna's food producers.

Ask and discuss

The duo behind Science Tasting, Per Styregård and Johan Lundström, have worked on various food and taste projects together for many years alongside other assignments.

- Johan knows a lot about the science and research in the field, while I have a lot of experience in describing flavors and talking about food and drink," says Per.

The event will be held during the lunch hour on Tuesday, October 22 in Ljusgården at Dalarna Science Park in Borlänge.

Participants will receive a lunch plate with locally produced food and a separate plate with selected samples.

- We will take small bites together and explore how our taste receptors and senses react. It is usually exciting and provides some aha experiences.

Per emphasizes that Science Tasting is not a traditional lecture, but an interactive event with room for questions and discussions.

- Why do some people think coriander tastes like soap? What happens in your body when you eat chili? And why is it important for food producers to tell us when a recipe has changed? These are the kinds of questions that usually come up during Science Tasting.

Many factors interact

During the pandemic, many people experienced what it is like to have no sense of smell or taste. While most people regained their abilities relatively quickly, others are still living with the effects of COVID.

- In general, smell and taste are very important for health and quality of life. If you don't know what food tastes like, you might, for example, avoid having dinner with others who enjoy good food and drink," says Per.

- The experience of food and drink is very special and there are many factors that interact, such as your expectations of how something should taste, the environment you are in, whether you are tired or alert, and so on. It's also the case that 90 percent of our taste experiences are actually smell experiences," says Per.

David Levrén and his colleagues hope that many people interested in food and drink will take the opportunity to participate in Science Tasting during Dalarna Innovation Days.

- Whether you work in a restaurant or bakery or enjoy cooking fine dining at home, come and learn more. We have room for many lunch guests, so welcome with your registration.
